Recipe: Roasted Chilliwack Sweet Corn

Chilliwack corn season is here. And if you love sweet B.C. corn just like we do, then now’s the time to take full advantage of the harvest that’s just getting started. Running until late September, sweet summer corn from Chilliwack is some of B.C.’s best.

We’re sharing a super easy sweet roasted corn recipe—along with a few expert cooking tips—from Greendale Acres (home of the Chilliwack corn maze), so you can make the most of this classic summer ingredient.

It’s time to put aside the canned corn and get grillin’.

Sweet Roasted Corn Recipe

INGREDIENTS

  • Fresh corn on the cob, husks on
  • Butter (or your favourite butter alternative)

Optional Toppings

  • Greendale Farm Sauce
  • Grated Parmesan cheese
  • Lime wedges
  • Hot honey
  • Sriracha & lime seasoning
  • Crushed nacho cheese tortilla chips
  • Tajín
  • Cajun seasoning
  • Garlic salt
  • Seasoning salt
  • Any favourite spice blend

INSTRUCTIONS

1. Leave the husks on and soak the corn in cold water for 20 minutes.

2. While the corn is soaking, preheat the barbecue to medium-high heat.

3. Place the corn directly on the grill and cook for 21 minutes, turning every 7 minutes so all sides cook evenly.

4. Remove the corn from the grill and place it in an insulated cooler (or cover with a towel) for a few minutes to trap the steam. The trapped steam will keep the corn hot and beautifully tender.

5. Carefully peel back the husks, leaving them attached at the base to create a natural handle.

6. Brush or ladle warm butter and finish with your favourite toppings.

TIP: If you’re feeding a large crowd, keep the grilled corn in a closed insulated cooler lined with a towel. The corn will stay hot and continue to steam, making it easy to serve fresh, flavourful corn throughout the gathering.

Greendale Farm Sauce Recipe

A great accompaniment takes even the best sweet corn to the next level. Greendale is sharing its farm sauce recipe for a creamy, tangy pairing that goes well with grilled corn.

INGREDIENTS

  • 2 cups mayonnaise
  • 1½ cups sour cream
  • ¼ cup fresh lime juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon southwest seasoning

INSTRUCTIONS

Whisk all ingredients together until smooth. Refrigerate until ready to serve.
