Eating pasta is back in style, and adding vegetables makes this pasta a healthy meal
This wonderful springtime dish is quick, easy and tasty — what more could you ask for?
Ingredients
- 1/4 cup good-quality olive oil
- 1/2 cup peeled pearl onions, or 1/2 small onion, sliced
- 1 tsp. granulated sugar
- 1 garlic clove, minced
- 1 large fresh tomato, diced
- 1/2 cup tomato sauce
- 1 cup sweet peas, shelled (fresh or frozen)
- Sea salt and freshly ground pepper, to taste
- 3 cups cooked penne (or your choice of cooked pasta)
- Fresh basil leaves, chopped (for garnish)
- Grated Parmesan cheese (to finish)
Instructions
- Heat the olive oil in a sauté pan.
- Add the pearl onions or sliced onion.
- Sprinkle with the sugar to promote caramelization and sauté for a few minutes, until the onions begin to brown.
- Add the garlic, diced tomato, tomato sauce and fresh or frozen peas. Sauté for about 3 minutes.
- Season with the sea salt and pepper, to taste.
- Toss in the cooked pasta until well combined.
- Garnish with fresh chopped basil and grated Parmesan cheese.
- Serve immediately.
