Recipe: Crispy Yams

Crispy yam cubes are a good fix when you’re craving restaurant-style yam fries

Restaurant-quality yam fries can be difficult to recreate at home, but these crispy yams are a good alternative

Dice yams into cubes, toss with a dry rub and pan-fry them in a bit of grapeseed oil. Voilà, crispy on the outside and buttery on the inside.



Ingredients

  • 2 medium yams, peeled and cut into 1/2-inch cubes

  • 1/2 cup Moroccan rub (or any other 
 rub that you like)

  • 1/2 cup grapeseed oil



Instructions

  1. Place the yam cubes in a large zip-lock bag and add your choice of rub.
  2. Seal the bag and shake well to coat.
  3. Heat the oil in a shallow non-stick frying pan.
  4. Add the yam cubes and fry for 5 to 8 minutes until golden brown and tender.
  5. Blot off the excess oil with paper towel and serve hot. (To make regular crispy yams, skip the rub and fry the yam cubes plain. Once they are cooked, simply sprinkle with sea salt and serve.)

Serves 4 to 6.
