Massaged Kale and Mango Salad

Try a flavoured olive oil to give your kale leaves some extra flavour in this mango kale salad

Give your kale an olive oil massage for a velvety soft superfood salad

Ingredients

  • 1 bunch kale
  • 1/4 cup olive oil
  • 1 lemon juiced
  • 2 tsp honey
  • 1 mango
  • ground pepper
  • sea salt (to taste)
  • dried cranberries
  • slivered almonds
  • pumpkin seeds

Instructions

  1. Remove the kale leaves from the stems and tear into smaller pieces.
  2. Drizzle 1/4 cup of oil over the kale. We used a flavoured olive oil but you can use regular olive oil as well.
  3. Gently massage the olive oil and lemon juice into the kale leaves ensuring that each leaf has been massaged with the olive oil. 
  4. Mix in the cut up pieces of mango.
  5. Toss, toss, toss!
  6. Season with salt + pepper.
  7. Sprinkle the salad with dried cranberries, slivered almonds and pumpkin seeds.
