Bocconcini Salad

Make this healthy, quick and super delicious bocconcini salad with greenhouse tomatoes now available at the farmers market

It’s hard to imagine anything more delicious than juicy tomatoes, soft cheese and vibrant basil drizzled with olive oil and balsamic vinegar!

Bocconcini salad is so easy to make and now that the Vancouver Farmers Markets are in full swing, you can get locally grown tomatoes and basil at five different locations across town.

A balsamic reduction will make this dish even more special. I love Nona Pia’s balsamic reduction and it’s made nearby in Whistler.

If you have friends dropping by, this recipe is quick and easy to whip up and the addition of bread and wine makes it totally guest-worthy.

Ingredients

  • 3 tomatoes, sliced
  • 1 container Bocconcini cheese, drained and sliced
  • Handful basil leaves, torn
  • 1 tbsp olive oil
  • 1 tbsp balsamic reduction

Instructions

  1. Lay tomato slices on platter and top with cheese and basil.
  2. Drizzle with olive oil and balsamic reduction.
