It’s hard to imagine anything more delicious than juicy tomatoes, soft cheese and vibrant basil drizzled with olive oil and balsamic vinegar!
Bocconcini salad is so easy to make and now that the Vancouver Farmers Markets are in full swing, you can get locally grown tomatoes and basil at five different locations across town.
A balsamic reduction will make this dish even more special. I love Nona Pia’s balsamic reduction and it’s made nearby in Whistler.
If you have friends dropping by, this recipe is quick and easy to whip up and the addition of bread and wine makes it totally guest-worthy.
If you’re looking for a great gluten-free bread option, try Cloud 9 Specialty Bakery’s piccolo buns – they’re like mini ciabatta buns and taste just like the “real” thing.
I am loving Lillooet’s Fort Berens Estate Winery. Its Pinot Gris is fantastic and would be a great pairing with this dish.
