Beef Tenderloin Sticks with Horseradish Cream

Mushroom Mixture Ingredients

  • 1 Tbsp. unsalted butter
  • 1 Tbsp. olive oil
  • 3 shallots, diced fine
  • 2 garlic cloves, minced
  • 2 cups sliced white button mushrooms
  • 2 cups sliced white fresh shiitake mushrooms
  • 1 cup sliced fresh chanterelles (if in season)
  • 2 cups of your favourite sliced mushrooms
  • 2 tsp. Takii Umami Powder (if available)
  • 1 Tbsp. fresh thyme leaves
  • ½ cup marsala wine
  • ½ tsp. Spice 2.0 chili paste (optional)
  • Sea salt to taste
  • Fresh ground pepper to taste
  • ½ cup finely minced parsley

Beef Cubes

  • 2 pounds beef tenderloin, cut into ½-inch cubes
  • 2 Tbsp. grapeseed oil
  • ⅓ cup of your favourite rub
  • 5-inch wooden skewers, soaked in water for about 1 hour
  • Horseradish cream for garnish

Instructions

  • Heat the butter and oil in a large sauté pan.
  • Add the shallots and garlic and soften for a few minutes.
  • Add all the sliced mushrooms and continue to cook on medium-high heat until the mushrooms begin to cook down.
  • Add the umami powder if using, the thyme, marsala wine and chilli paste. Shake the pan to promote even cooking and continue heating until all the moisture is cooked away. At this point, season with salt and ground pepper.
  • Place the mushroom mixture in an oven on low heat to keep warm.
  • Place the beef cubes in a shallow tray and drizzle the oil over top tossing to ensure the meat is glistening.
  • Sprinkle the rub over and using your hands, press on the beef cubes to ensure the rub sticks to the meat.
  • Skewer 3 to 4 cubes onto each wooden skewer.
  • Heat a good griddle to high heat and cook the beef skewers on all sides until cooked to your desire.
  • Place a scoop of the mushroom mixture on a small dish, top with a beef skewer and finish with a drizzle of horseradish cream.
